Whole grain flour corn for home-grinding into flour. Flour corn contains more "floury endosperm" than any other type of corn, and can therefore be used for even fine cake flours. Cherokee White has a warm pancake flavor that is great for sandwich breads, muffins, pancakes and waffles. Raised naturally without pesticides, herbicides or chemical fertilizers, cultivated using draft horse power.

Flour corn is NOT what you buy in the store as corn meal, nor tortilla flour like "masa harina." This is a fine, white flour that's perfect for baking sandwich bread, waffles, yeast rolls and pound cake, or anything else you'd like to make using a gluten-free flour. It has good enough cohesion on its own to make a sandwich bread without xantham gum, and it's starchy enough not to need additional starches added. We love it for its ability to make a complete flour, unlike other common gluten-free options, like rice.
We raise our corn using draft horse power, natural soil-building methods and responsible crop rotation. Nothing is sprayed, added or altered; we use no chemical fertilizers, no pesticides (other than the happy, free-range ducks, who patrol for insects), no herbicides and no preservatives. The dry corn is shelled by hand from the cob, stored in clean, glass jars and sold ready for you to grind into fresh flour.
Use the flour for thickening soups, or making pancakes, or baking bread, biscuits, etc! See our recipes for some examples. If you have old (pre-agricultural revolution of the 1940's) cookbooks, try using this heritage flour anywhere they call for "corn flour." Our suggestion is to use it along with our free-range duck eggs, to get better results than you can with commercial eggs.
